Low-Carb Ham Bombs
Servings: 4
Ingredients
-
12 slices deli ham (thin or medium, about 3/4 pound)
-
1 cup shredded cheddar cheese (about 4 ounces)
-
4 ounces cream cheese, softened
Low-Carb Ham Bombs: Directions
-
Heat oven to 375°F (190°C). Grease an 8×8-inch glass dish lightly so rolls don’t stick.
-
Mix softened cream cheese and 1/2 cup cheddar in a bowl till smooth and thick.
-
Lay ham slices flat. Cut big ones in half if you want small bites.
-
Spoon cheese mix down the middle of each ham slice. Leave edges empty.
-
Roll each slice tight from one end, like a little log. Put seam down.
-
Fit all rolls seam-side down in the dish, close together for support.
-
Sprinkle rest of cheddar (1/2 cup) on top. Some in gaps is fine—it melts!
-
Bake 15-20 minutes till ham browns lightly, cheese bubbles, and grease sizzles.
-
Rest 3-5 minutes. Cheese firms up for easy grabbing. Serve warm!
Serve hot with salad, cukes, tomatoes, ranch dip, mustard, soup, or veggies. They reheat great for the week.
