This Corned Beef, Cheese and Red Onion Toastie is the ultimate indulgent grilled sandwich — thick slices of corned beef, melted gooey cheese, and sweet red onion pressed between golden, buttery toasted bread. Simple comfort food at its best.

Ingredients

  • 4 slices thick white bread
  • 200g (7 oz) corned beef, sliced
  • 150g (1½ cups) cheddar cheese, grated (or sliced)
  • ½ small red onion, thinly sliced
  • 2 tbsp butter, softened
  • 1 tsp English mustard (optional)
  • Black pepper, to taste

Corned Beef-Cheese and Red Onion Toastie: Instructions

  1. Lay out the four slices of bread on a clean surface.
  2. Spread a thin layer of English mustard over two of the slices, if using.
  3. Layer the corned beef evenly over the mustard-spread slices.
  4. Scatter the thinly sliced red onion on top of the corned beef.
  5. Sprinkle the grated cheese generously over the onions, dividing it between the two sandwiches.
  6. Add a light crack of black pepper over the cheese.
  7. Top each sandwich with the remaining slices of bread, pressing down gently to secure.
  8. Butter the outer sides of each sandwich generously, covering the bread edge to edge.
  9. Heat a large frying pan or griddle over medium heat.
  10. Place the sandwiches in the pan and cook for 3–4 minutes on the first side, until deep golden brown.
  11. Carefully flip the sandwiches and press down gently with a spatula.
  12. Cook for a further 3–4 minutes on the second side, until the bread is golden and the cheese has fully melted.
  13. Remove from the pan and let the toasties rest for 1 minute before slicing.
  14. Cut in half diagonally and serve immediately while the cheese is warm and gooey.
