Ingredients

  • 130 g self-raising flour

  • 110 g sugar

  • 110 g margarine or butter

  • 3 eggs

  • Golden syrup (amount to your liking)

Golden Syrup Sponge Pudding: Directions

  1. Grease a slow-cooker-safe tin (a loaf tin works well) so the pudding won’t stick.

  2. In a bowl, mix the self-raising flour, sugar, margarine (or butter), and eggs until smooth.

  3. Pour a layer of golden syrup into the bottom of the greased tin (use as much syrup as you like).

  4. Spoon the batter over the syrup, spreading it so the syrup is fully covered.

  5. Cover the can with foil and make sure it is sealed well.

  6. Put the tin into the slow cooker and pour in hot water until it reaches halfway up the tin.

  7. Cook on High for about 2.5 hours, until the sponge is set and a skewer comes out clean.

  8. Carefully remove the tin, unwrap the foil, and serve warm. Spoon extra syrup over each portion if you like.
