A warm, sticky pudding cooked in a slow cooker. Light sponge batter sits over gooey golden syrup so the sauce soaks into the cake while it cooks. Makes a comforting dessert for family nights. Simple ingredients and an easy method make it great for beginners and kids who want to help.
Ingredients
-
130 g self-raising flour
-
110 g sugar
-
110 g margarine or butter
-
3 eggs
-
Golden syrup (amount to your liking)
Golden Syrup Sponge Pudding: Directions
-
Grease a slow-cooker-safe tin (a loaf tin works well) so the pudding won’t stick.
-
In a bowl, mix the self-raising flour, sugar, margarine (or butter), and eggs until smooth.
-
Pour a layer of golden syrup into the bottom of the greased tin (use as much syrup as you like).
-
Spoon the batter over the syrup, spreading it so the syrup is fully covered.
-
Cover the can with foil and make sure it is sealed well.
-
Put the tin into the slow cooker and pour in hot water until it reaches halfway up the tin.
-
Cook on High for about 2.5 hours, until the sponge is set and a skewer comes out clean.
-
Carefully remove the tin, unwrap the foil, and serve warm. Spoon extra syrup over each portion if you like.
