Easy Lemon Herb Chicken Slow Cooker. Made this bright and soft chicken for my mother-in-law. She put down her fork and said it was the best food anyone ever made for her!
This super simple chicken cooks in a slow cooker with just a few things. It tastes fresh with lemon zing and yummy herbs. The meat stays soft and juicy. Great for busy days! Spoon the tasty juices on top. Pairs with potatoes, rice, noodles, or greens. Leftovers rock in salads or bowls.
Ingredients

2 pounds chicken breasts without skin or bone (about 4 pieces)

1/2 cup chicken broth (the low-salt kind)

1 big lemon, cut into thin slices (add 2 spoons of juice from another lemon if you want)

2 spoons dried Italian herbs (or mix basil, oregano, and thyme)

1 spoon salt

1/2 spoon black pepper

2 spoons chopped fresh parsley to sprinkle on top (if you like)
Easy Lemon Herb Chicken: Directions

Dry the chicken with paper towels. Put it in one layer at the bottom of your slow cooker (4 to 6 quarts big).

Mix broth, herbs, salt, pepper, and lemon juice (if using) in a bowl. Pour it all over the chicken.

Put lemon slices on top of the chicken, overlapping a bit to cover most of it. This keeps chicken wet and adds lemon taste.

Put the lid on. Cook on LOW for 3.5 to 4.5 hours, or HIGH for 2 to 2.5 hours. Chicken is done when soft and inside hits 165°F. Don’t peek early to keep heat steady.

For pretty browned spots like in fancy places, move chicken and lemons to a baking sheet. Spoon some juices on top. Broil in oven top rack for 3-5 minutes. Watch so lemons just turn golden.

Put chicken and lemons back in slow cooker. Spoon warm juices over. Taste and add salt or lemon if needed.

Sprinkle parsley on chicken for color. Serve hot with lemon slices and lots of juices on top. Goes great with mashed potatoes, rice, buttered noodles, green beans, asparagus, salad, or bread.
