Ingredients

  • 3 pounds russet or Yukon Gold potatoes (peel if you want, slice thin)

  • 1 small packet (1 ounce) dry onion soup mix

  • 4 tablespoons butter (no salt), cut into tiny bits

  • 1 cup low-salt chicken broth (or plain water)

Amish Onion Potatoes: Directions

  1. Rub a little butter or spray inside your 4- to 6-quart slow cooker so potatoes don’t stick.

  2. Wash potatoes good. Peel if you like them super soft. Cut into thin circles, about as thick as a pencil.

  3. Put potato slices flat in the cooker, like making layers in a bed.

  4. Shake onion soup mix all over the top, like sprinkling fairy dust.

  5. Drop butter bits on top so they melt and mix in.

  6. Pour broth slowly over it all. Don’t rinse off the mix—keep it tasty!

  7. Put on the lid. Cook on LOW 5-6 hours or HIGH 3-3 1/2 hours till soft when poked with a fork.

  8. Stir gently to mix flavors. Add salt or pepper if you want. Serve hot right from the cooker!
