Ingredients

  • 8 pork sausages
  • 1 tbsp vegetable oil
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • Peel 2 medium potatoes and cut them into big pieces
  • 1 x 400g (14 oz) can chopped tomatoes
  • 300ml (1¼ cups) chicken or beef stock
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried mixed herbs
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 100g (¾ cup) frozen peas

Slow Cooked Sausage Casserole: Instructions

  1. Pour oil into a frying pan. Heat it over medium-high heat until it gets hot.
  2. Brown the sausages on all sides for 4–5 minutes, then transfer to the slow cooker. This step is optional but adds extra flavour.
  3. Cook the onion and garlic in the same pan until they become soft, about 2 to 3 minutes.
  4. Add the onion and garlic to the slow cooker along with the carrots and potatoes.
  5. Pour in the chopped tomatoes, stock, and tomato purée, stirring to combine.
  6. Add the Worcestershire sauce, dried mixed herbs, bay leaf, salt, and pepper.
  7. Stir everything together well, making sure the sausages and vegetables are coated in the sauce.
  8. Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the potatoes are tender and the sausages are cooked through.
  9. Stir in the frozen peas during the last 15–20 minutes of cooking.
  10. Remove the bay leaf before serving.
  11. Taste and adjust the seasoning as needed.
  12. Ladle into bowls and serve hot, with crusty bread or mashed potatoes on the side.

This comforting, one-pot sausage casserole is perfect for busy weeknights — simply set it and forget it while the slow cooker does all the work.
