This Slow Cooked Sausage Casserole is a hearty, rustic dish loaded with juicy sausages, tender potatoes, carrots and peas, all simmered in a rich tomato sauce. A simple, budget-friendly family dinner that’s bursting with flavour.
Ingredients
- 8 pork sausages
- 1 tbsp vegetable oil
- 1 large onion, sliced
- 2 garlic cloves, minced
- 2 carrots, sliced
- Peel 2 medium potatoes and cut them into big pieces
- 1 x 400g (14 oz) can chopped tomatoes
- 300ml (1¼ cups) chicken or beef stock
- 1 tbsp tomato purée
- 1 tbsp Worcestershire sauce
- 1 tsp dried mixed herbs
- 1 bay leaf
- Salt and black pepper, to taste
- 100g (¾ cup) frozen peas
Slow Cooked Sausage Casserole: Instructions
- Pour oil into a frying pan. Heat it over medium-high heat until it gets hot.
- Brown the sausages on all sides for 4–5 minutes, then transfer to the slow cooker. This step is optional but adds extra flavour.
- Cook the onion and garlic in the same pan until they become soft, about 2 to 3 minutes.
- Add the onion and garlic to the slow cooker along with the carrots and potatoes.
- Pour in the chopped tomatoes, stock, and tomato purée, stirring to combine.
- Add the Worcestershire sauce, dried mixed herbs, bay leaf, salt, and pepper.
- Stir everything together well, making sure the sausages and vegetables are coated in the sauce.
- Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the potatoes are tender and the sausages are cooked through.
- Stir in the frozen peas during the last 15–20 minutes of cooking.
- Remove the bay leaf before serving.
- Taste and adjust the seasoning as needed.
- Ladle into bowls and serve hot, with crusty bread or mashed potatoes on the side.
