Poor Man’s Chicken and Celery Slow Cooker. This easy slow cooker chicken and celery dish uses just 3 main things. It looks simple but tastes warm and cozy, like a big hug in a bowl. My neighbor shared her grandma’s secret from tough money days. She lived on little cash and made do with pot basics. I had to tell you after trying it—it’s so easy and yummy!

Poor Man’s Chicken and Celery Slow Cooker
Servings: 4

Ingredients

  • 3 pounds chicken pieces with bones (like legs or thighs, or a whole cut-up chicken; take off skin if you want)

  • 6 cups water

  • 6 big celery sticks, chopped into 1-inch pieces (add leaves too if you have them)

  • 2 teaspoons salt (or more to taste)

Poor Man’s Chicken and Celery: Directions

  1. Put celery pieces in the bottom of your slow cooker. Spread them flat like a soft bed. This keeps chicken up a bit and mixes flavors into the yummy juice.

  2. Put chicken pieces on top of the celery. Fit them close together. Legs and thighs work great—they get extra soft and juicy.

  3. Pour water over the chicken and celery. Shake salt all over evenly. The juice starts mild and nice—taste at end and add more if needed.

  4. Put on the lid. Cook on LOW 7-9 hours, or HIGH 4-5 hours. Chicken gets super tender, pulls off bones easy, and celery turns soft and see-through. Juice looks light gold from chicken goodies.

  5. Taste the juice and add salt if you like. Use tongs to pull out chicken—it’s wobbly soft. Spoon celery and juice on top to serve.

Serve hot in bowls with lots of celery and juice. Pick out bones as you eat. Great over white rice, egg noodles, or buttered toast. Add crackers, bread, salad, peas, or potatoes if you can. Save extras in fridge with juice up to 3 days, or freeze for later.
