May 5th Fun Chicken Slow Cooker

May 5th Fun Chicken Slow Cooker. This super easy 4-ingredient slow cooker chicken for May 5th fun is perfect when family visits and I want to chat instead of cook. It uses raw chicken legs with bone, like from our old town butcher. A colorful sauce of tomatoes and spices soaks them. The cooker makes them soft and smoky-tasty for May 5th or busy nights.

Tender, fiesta-flavored chicken legs simmer in a zesty salsa-enchilada sauce. Just dump in, cook low and slow, and serve saucy over rice or tacos. Family-pleasing, no-fuss meal with smoky spice kick—ready in hours!

May 5th Fun Chicken: Directions

  1. Put raw chicken legs in a 5- to 6-quart slow cooker. Lay them flat in one layer. A little overlap is okay.

  2. In a bowl, mix salsa, enchilada sauce, and taco seasoning. Stir until smooth and colorful.

  3. Pour mix over chicken. Coat everything and let legs sit in the sauce.

  4. Cover and cook on LOW flame for 6 to 7 hrs or HIGH on heat for 3 to 4 hrs. Chicken is done when super soft, pulls off bone easy, and hits 165°F inside.

  5. Taste sauce. Add salt or pepper if needed. Spoon off extra fat from top if you want.

  6. Serve hot with sauce on top. Or pull meat off bones, shred in cooker, and mix back in.

Serve over warm rice or noodles to grab all the yummy sauce. Or stuff in soft tortillas with cheese and sour cream. Add corn, salad, or fried potatoes for a cozy meal. Chips, salsa, or avocado make it party-ready—no extra work!
