Low-Carb Ham Bombs
Servings: 4

Ingredients

  • 12 slices deli ham (thin or medium, about 3/4 pound)

  • 1 cup shredded cheddar cheese (about 4 ounces)

  • 4 ounces cream cheese, softened

Low-Carb Ham Bombs: Directions

  1. Heat oven to 375°F (190°C). Grease an 8×8-inch glass dish lightly so rolls don’t stick.

  2. Mix softened cream cheese and 1/2 cup cheddar in a bowl till smooth and thick.

  3. Lay ham slices flat. Cut big ones in half if you want small bites.

  4. Spoon cheese mix down the middle of each ham slice. Leave edges empty.

  5. Roll each slice tight from one end, like a little log. Put seam down.

  6. Fit all rolls seam-side down in the dish, close together for support.

  7. Sprinkle rest of cheddar (1/2 cup) on top. Some in gaps is fine—it melts!

  8. Bake 15-20 minutes till ham browns lightly, cheese bubbles, and grease sizzles.

  9. Rest 3-5 minutes. Cheese firms up for easy grabbing. Serve warm!

Serve hot with salad, cukes, tomatoes, ranch dip, mustard, soup, or veggies. They reheat great for the week.
