- 2 chicken breasts
- 1 onion, chopped
- 2 carrots, sliced

- 1 litre (4 cups) chicken stock
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped, for topping
Easy Slow Cooker Chicken Soup: Instructions
- Put the chicken breasts in the bottom of the slow cooker first.
- Add the chopped onion, sliced carrots, chopped celery, and crushed garlic on top of the chicken.
- Pour the chicken stock over everything so it covers the chicken and vegetables.
- Drizzle the olive oil over the top.
- Sprinkle in some salt and black pepper.
- Stir everything gently so it’s mixed together nicely.
- Put the lid on the slow cooker.
- Cook the food on the low setting for about 6 hours.
