This warm and cozy Slow Cooker Beef Stew and Dumplings is full of soft beef, veggies, and fluffy dumplings. It cooks low and slow so the meat gets super tender. The dumplings are soft and light on top. It’s a simple, filling meal that’s perfect for cold days and easy family dinners.

Ingredients

  • 600g beef chuck, cut into cubes
  • 2 carrots, chopped
  • 2 celery sticks, sliced
  • 1 onion, chopped small
  • 2 tbsp plain flour
  • 500ml beef stock
  • 2 tbsp tomato purée
  • 1 tsp Worcestershire sauce
  • 100g self-raising flour
  • 50g suet
  • Salt and pepper, to taste

Beef Stew and Dumplings: Instructions

  1. Coat the beef cubes in the plain flour until covered.
  2. Put the beef into the slow cooker along with the carrots, celery, and onion.
  3. Pour the beef stock over the top.
  4. Add the tomato purée and Worcestershire sauce, then stir well.
  5. Add salt and pepper to taste.
  6. Cover with the lid and cook on low for 7 to 8 hours, until the beef is very soft and tender.
  7. About 30 minutes before the stew is ready, make the dumplings.
  8. Mix the self-rising flour, suet, and a little salt together in a bowl.
  9. Slowly add water and stir until it forms a soft, sticky dough.
  10. Roll the dough into small balls with your hands.
  11. Drop the dumpling balls gently on top of the stew.
  12. Cover again and keep cooking until the dumplings puff up and turn light and fluffy.
  13. Serve the stew hot, with a few dumplings in each bowl.
