Creamy Pesto Chicken Slow Cooker

Makes: 4 plates

What You Need

  • 2 pounds chicken breasts (no skin or bone)

  • 1 cup basil pesto (from jar or made at home), split in two

  • 1 cup cream or half-and-half

  • 1 1/2 cups shredded white cheese like mozzarella

How to Make It

  1. Spray or oil inside of slow cooker for easy clean.

  2. Put chicken in a flat layer at bottom. A little overlap is okay.

  3. Mix 3/4 cup pesto with cream in a bowl till smooth and green.

  4. Pour mix over chicken. Flip chicken to coat all sides.

  5. Cover. Cook on LOW 3-1/2 to 4-1/2 hours, or HIGH 2-3 hours. Chicken done at 165°F inside.

  6. Shred chicken with forks in cooker. Stir to coat.

  7. Mix in last 1/4 cup pesto. Add salt or pepper if you want.

  8. Top with cheese. Cover on LOW or WARM 10-15 minutes till cheese melts.
