What You Need (Serves 4)
-
2 big purple onions, chopped into fat chunks
-
2 pounds chicken thighs (no bones or skin; breasts work too)
-
1 small packet onion soup mix (about 1 ounce)
-
1/2 cup chicken broth (the low-salt kind)

Crockpot Onion Chicken: Steps
-
Get onions ready: Peel the purple onions. Cut each into 6-8 big, thick pieces. They stay chunky but get soft later.
-
Put onions in cooker: Spread the raw onion chunks flat on the bottom of your slow cooker. They make a cozy bed for the chicken.
-
Fix up the chicken: Dry the chicken with a paper towel. Rub both sides with the onion soup mix. Press it in so it sticks.
-
Add chicken: Lay the chicken on top of the onions. It’s okay if pieces touch a little. Keep them mostly flat.
-
Pour in broth: Drizzle the chicken broth around the sides and gaps. Don’t pour it right on top.
-
Cook it slow: Put the lid on. Cook it on LOW heat for 5-6 hrs or HIGH heat for 2.5-3 hrs. Chicken should shred easy with a fork. Onions will be super soft.
-
Taste and eat: Try the onion juice. Add a little salt or pepper if you want. Scoop onions and sauce over chicken. Serve hot!
Tip: Eat over mashed potatoes, noodles, or rice. Add green veggies on the side. Save leftovers for sandwiches!
