Loaded Cozy Potatoes (first try). I’m trying loaded potatoes for the first time because everyone says they’re great—after the “fake away” kebab made me laugh. I cut lots of potatoes into small pieces. I used eight rashers of bacon cut into strips, one red onion (that’s all I had), two cloves of garlic chopped small, and lots of cheese.
Comforting, cheesy baked potatoes filled with bacon, onion, and garlic. Easy to assemble with no extra liquid; the layers roast slowly until soft and golden. A family-friendly dish served with salad or lettuce, perfect for a first try. Add paprika later for a spicy kick.
Ingredients

Lots of potatoes, cut small (enough to cover the dish twice)

8 rashers of bacon, cut into strips

1 red onion, chopped

2 cloves garlic, chopped finely

Lots of cheese, grated (as much as you like)

Extra cheese to sprinkle on top (optional)

Lettuce and salad cream, to serve (optional)

Loaded Cozy Potatoes: Directions

Preheat your slow cooker or oven setting to high (or a similar high heat).

Cover the bottom of the dish with a layer of chopped potatoes.

Sprinkle some chopped onion on top of the potato layer.

Add some bacon strips, a little grated cheese, and a bit of chopped garlic over the onion.

Add the rest of the potatoes to cover the first layers.

Repeat with the remaining chopped onion, garlic, bacon, and cheese on top.

Cook on high for about 4 hours. Check if the potatoes are soft—judge by poking with a fork.

If potatoes are soft, add extra cheese on top and let it melt for a few minutes.

Serve hot with lettuce and salad cream. Optionally, sprinkle paprika for a spicy touch
