This Slow Cooker Beef Goulash is a rich, paprika-spiced stew with tender beef, red peppers and mushrooms in a deep, savoury sauce. Served over buttery tagliatelle and topped with fresh chives, it’s hearty comfort food at its finest.
Ingredients
- 800g (1¾ lb) stewing beef, cut into chunks
- 1 tbsp vegetable oil
- 1 large onion, sliced
- 2 garlic cloves, minced
- 2 red bell peppers, sliced
- 150g (2 cups) button mushrooms, halved
- 2 tbsp sweet paprika
- 1 tsp smoked paprika
- 1 tbsp plain flour
- 1 x 400g (14 oz) can chopped tomatoes
- 500ml (2 cups) beef stock
- 1 tbsp tomato purée
- 1 tsp caraway seeds (optional)
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh chives, chopped, to garnish
- To serve: cooked tagliatelle or egg noodles
Slow Cooker Beef Goulash: Instructions

- Brown the beef chunks in batches for 2–3 minutes per side, then transfer to the slow cooker. Browning is optional but deepens the flavour.
- Cook the onion and garlic in the same pan until they become soft, about 2 to 3 minutes.
- Add the onion and garlic to the slow cooker along with the red peppers and mushrooms.
- Sprinkle over the sweet paprika, smoked paprika, and flour, stirring to coat the beef and vegetables.
- Pour in the chopped tomatoes, beef stock, and tomato purée, stirring well to combine.
- Add the caraway seeds, if using, along with the bay leaf, salt, and pepper.
- Put the lid on the slow cooker and let the beef cook. Cook it on low for 7 to 8 hours or on high for 4 to 5 hours. It is ready when the beef is soft and easy to pull apart with a fork.
- Stir once or twice during cooking, adding a splash more stock if the sauce looks too thick.
- Remove the bay leaf before serving.
- Taste and adjust the seasoning as needed.
- Meanwhile, cook the tagliatelle or egg noodles according to package instructions.
- Serve the goulash hot over the pasta, garnished generously with fresh chopped chives.
