For the Mashed Potatoes:

  • 900g (2 lb) potatoes, peeled and chopped
  • 4 tbsp butter
  • 120ml (½ cup) warm milk
  • Salt and black pepper, to taste

Fried Chicken Breast-Green-Beans: Instructions

  1. Place the chicken breasts in a bowl, cover with buttermilk, and let marinate for at least 30 minutes (or up to overnight in the fridge).
  2. In a separate bowl, mix the flour, garlic powder, paprika, salt, and pepper.
  3. Remove the chicken from the buttermilk, letting excess drip off, then dredge each piece thoroughly in the seasoned flour.
  4. Heat about 2.5cm (1 inch) of vegetable oil in a large skillet over medium-high heat until hot.
  5. Fry the chicken for 5–6 minutes per side, until golden brown and cooked through, then drain on paper towels.
  6. Meanwhile, cook the bacon in a saucepan over medium heat until crispy, then add the onion and cook for 2–3 minutes.
  7. Add the green beans and chicken stock to the pan, cover, and simmer for 15–20 minutes until tender.
  8. Add salt and black pepper to the mashed potatoes until they taste just right.
  9. While the beans simmer, place the chopped potatoes in a large pot of salted water and boil for 15–18 minutes, until fork-tender.
  10. Drain the potatoes well, then mash with butter and warm milk until smooth and creamy.
  11. Add salt and black pepper to the mashed potatoes until they taste just right.
  12. Plate the fried chicken alongside the green beans and a generous scoop of mashed potatoes, finishing the potatoes with an extra pat of butter and a sprinkle of black pepper.
