Slow Cooker Onion Soup Pork Tenderloin: This slow cooker pork tenderloin with only 4 ingredients is just like the easy dinner trick my aunt loved from her old church cookbook back in the 1970s. It’s one of those “toss it in, walk away, and come back to yummy food” meals. Somehow it tastes like you spent hours cooking, even though you didn’t!
This juicy pork tenderloin cooks low and slow in a rich, golden onion gravy made from simple pantry items. It’s a no-fuss dinner that fills your kitchen with cozy smells all day long. Perfect for busy nights, this dish turns basic ingredients into a warm, comforting meal your whole family will ask for again.
The pork tenderloin cooks all day in a mix of onion soup mix and a few pantry basics. As it cooks, it turns into soft, juicy pork slices sitting in a smooth, golden onion gravy. This meal is great for busy weeknights when you want something warm and homemade, but you don’t have time to stand at the stove.
Scoop the sliced pork right out of the slow cooker and pour that tasty onion gravy right on top. It goes great with creamy mashed potatoes or buttery egg noodles. You can also serve it over rice or cauliflower rice, since both soak up the sauce well. Add a simple veggie side, like steamed green beans, a fresh salad, or roasted broccoli, to balance out the rich flavor. If you have leftovers, pile the pork onto toasted bread with extra gravy for a delicious open-faced sandwich.
Servings: 4
Ingredients
- 1.5 to 2 pounds pork tenderloin (1 big piece or 2 small pieces, with the silver skin trimmed off)
- 1 packet (1 ounce) dry onion soup mix
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1 cup low-sodium beef broth (or plain water)
Slow Cooker Onion Soup Pork Tenderloin: Directions
- Get your slow cooker ready. Spray the inside with nonstick cooking spray, or rub a little oil around the inside. This makes cleanup much easier later.
- Add the pork. Place the pork tenderloin at the bottom of the slow cooker. If you’re using two smaller pieces, lay them next to each other. Tuck the skinny ends underneath so the meat cooks evenly all the way through.
- Mix the sauce. In a medium bowl, whisk together the dry onion soup mix, the condensed cream of mushroom soup, and the beef broth. Stir until it’s mostly smooth. Don’t worry if it’s not perfect — just make sure everything is blended together well.
- Pour it over the pork. Pour the onion soup mixture evenly over the top of the pork tenderloin. Try to spread the sauce over most of the meat. If a little bit peeks out on top, that’s okay — it will soak up flavor as it cooks.
- Cook low and slow. Put the lid on the slow cooker. Cook on LOW for 4 to 6 hours, or on HIGH for 2.5 to 3.5 hours. The pork is done when it feels very soft but can still be sliced. If your slow cooker tends to cook hot, start checking it a little earlier.
- Let it rest. Once the pork is done cooking, move it to a cutting board. Let it sit for about 5 minutes. This short rest helps keep the juices inside the meat, so your slices stay moist and tender.
- Stir the gravy. While the pork rests, give the sauce left in the slow cooker a good stir. It should look smooth and golden brown, with soft bits of onion mixed throughout.
- Slice the pork. Cut the pork tenderloin into pieces about 1/2-inch thick. Put the slices back into the slow cooker and gently mix them into the warm gravy so every piece gets coated and looks shiny and saucy.
- Serve and enjoy. Scoop the pork slices right out of the slow cooker onto plates. Spoon extra onion gravy over each serving before eating.
