This Corned Beef, Cheese and Red Onion Toastie is the ultimate indulgent grilled sandwich — thick slices of corned beef, melted gooey cheese, and sweet red onion pressed between golden, buttery toasted bread. Simple comfort food at its best.
Ingredients
- 4 slices thick white bread
- 200g (7 oz) corned beef, sliced
- 150g (1½ cups) cheddar cheese, grated (or sliced)
- ½ small red onion, thinly sliced
- 2 tbsp butter, softened
- 1 tsp English mustard (optional)
- Black pepper, to taste
Corned Beef-Cheese and Red Onion Toastie: Instructions
- Lay out the four slices of bread on a clean surface.
- Spread a thin layer of English mustard over two of the slices, if using.
- Layer the corned beef evenly over the mustard-spread slices.
- Scatter the thinly sliced red onion on top of the corned beef.
- Sprinkle the grated cheese generously over the onions, dividing it between the two sandwiches.
- Add a light crack of black pepper over the cheese.
- Top each sandwich with the remaining slices of bread, pressing down gently to secure.
- Butter the outer sides of each sandwich generously, covering the bread edge to edge.
- Heat a large frying pan or griddle over medium heat.
- Place the sandwiches in the pan and cook for 3–4 minutes on the first side, until deep golden brown.
- Carefully flip the sandwiches and press down gently with a spatula.
- Cook for a further 3–4 minutes on the second side, until the bread is golden and the cheese has fully melted.
- Remove from the pan and let the toasties rest for 1 minute before slicing.
- Cut in half diagonally and serve immediately while the cheese is warm and gooey.
