Chicken and Baked Beans Slow Cooker 4-Ingredient. This easy slow cooker chicken and beans recipe with just 4 things is like a simple crowd-pleaser at church potlucks. It vanishes fast from the table! My uncle made it for every spring party at the hall, and people waited by the cooker for it to finish. You mix chicken, canned beans, BBQ sauce, and onion. It cooks all day into a yummy, thick sauce with super soft chicken. Great for busy days, family get-togethers, or quick hearty meals.
Serve it straight from the cooker with a big spoon for chicken, beans, and sauce. It’s awesome on rice, noodles, or mashed potatoes. For a real potluck meal, add coleslaw, salad, green beans, rolls, or cornbread. Pickles or beets on the side are nice too.
Tender chicken simmers in sweet baked beans and tangy BBQ sauce with onions for a no-fuss, flavorful meal. Just layer and slow cook—perfect for potlucks or weeknights. Juicy, hearty bites melt in your mouth over rice or potatoes. Family favorite that’s ready when you are, with zero hassle!
Ingredients
-
2 pounds boneless, skinless chicken breasts (about 4 big pieces)
-
2 (28-ounce) cans baked beans in tomato sauce
-
1 cup barbecue sauce (pick your fave, regular or smoky)
-
1 medium yellow onion, cut into thin slices
Chicken and Baked Beans: Directions
-
Spray or oil the inside of a 5- to 6-quart slow cooker lightly. This makes cleanup easy.
-
Spread the onion slices flat on the bottom. They make a soft bed for the chicken.
-
Place chicken breasts on the onions in one layer. A little overlap is okay.
-
In a bowl, mix baked beans and BBQ sauce well. It gets thick and shiny.
-
Pour the bean mix over the chicken. Push chicken down so it’s covered in sauce and beans.
-
Put on the lid. Cook it on low heat for 6-8 hrs or HIGH heat for 3 to 4 hours. Chicken should be soft and hit 165°F inside.
-
Taste the sauce. Add salt or pepper if you want (not one of the 4 ingredients).
-
Serve whole chicken with lots of beans and sauce on top. Or shred chicken in the cooker with forks and mix for a stew feel.
