- 2 pounds beef stew meat, cut into 1½-inch chunks
- 0.3 cups Dijon mustard
- 4 tablespoons unsalted butter, softened (plus a little extra if you like)
Dijon Beef Packets: Steps
- Cut your foil sheets: Rip off 4 big pieces of heavy-duty foil. Each piece should be about 12×12 inches — big enough to wrap the beef with room to fold the edges shut. If your foil is thin, stack two pieces together so nothing leaks.
- Coat the beef in mustard: Put the 2 pounds beef stew meat, cut into 1½-inch chunks into a bowl. Pour the 0.3 cups Dijon mustard over it and mix it all around until every piece of beef is covered in mustard. The mustard already has salt in it, so you don’t need to add any extra seasoning.
- Divide the beef: Split the mustard-coated beef into 4 equal piles. Put one pile right in the middle of each foil sheet.
- Add butter: Break 4 tablespoons unsalted butter, softened (plus a little extra if you like) into a few small bits and place them on top of each beef pile — one tablespoon per packet. This helps the beef stay moist and adds a rich, buttery taste.
- Wrap the packets: Fold the sides of the foil up and over the beef. Press the edges together tightly so no juice can get out. Fold in the ends too. You want each packet to be snug and sealed up like a little silver bundle.
- Place in slow cooker: Set all 4 packets in the bottom of your slow cooker with the folded side facing up. Try to lay them flat. It’s okay if they overlap a little — just make sure the lid still closes all the way.
- Cook slowly: Cover it with the lid and cook on LOW for 6 hours., or cook on HIGH heat for 3 to 4 hrs. Don’t open the lid while it’s cooking — every time you peek, heat escapes and it takes longer to finish.
- Take out the packets: When the beef is done, use tongs to carefully lift the hot packets out of the slow cooker. Put them on plates or a cutting board. Open each one slowly and tilt it away from your face — there will be a big puff of hot steam inside.
- Optional butter finish: Want to make it extra special? Smear a tiny bit more softened butter on top of the hot beef as soon as you open the packet. It melts right into the juices and tastes amazing.
- Serve and enjoy: Eat the beef right out of the foil packet, or scoop it onto a plate. Spoon the yummy Dijon butter sauce from the bottom of the packet over the meat and any sides you’re having. Toss the foil when you’re done!
