Slow Cooker Pesto Chicken

Easy Slow Cooker Pesto Chicken… Put basil pesto on raw chicken breasts with 2 easy add-ins in a slow cooker. It makes a yummy dinner for busy weeknights when you have no idea what to cook!

This super-easy chicken dish uses just 4 things you probably have at home. Green pesto coats juicy chicken as it cooks slow and slow in the cooker. It turns out tender with herby flavor like from Italy. No fuss, big taste—perfect for fast family meals with rice or veggies on the side.

Makes: 4 plates

What You Need

  • 2 pounds chicken breasts without skin or bone (about 4 pieces)

  • 1 cup basil pesto (from store or make it)

  • 1/2 cup chicken broth (the low-salt kind)

How to Make Slow Cooker Pesto Chicken

  1. Put the slow cooker bowl on a flat counter. Dry the chicken with paper towels. Lay chicken flat in the bottom. It’s okay if they touch a bit, but don’t pile high.

  2. Spoon pesto on top of each chicken piece. Spread it with the spoon back or your clean hands. Cover every bit good—this makes it tasty!

  3. Pour broth around the sides, not on top. This keeps pesto on and makes juicy sauce.

  4. Sprinkle cheese all over the pesto chicken. Some drops in broth—that’s good, it makes creamy sauce.

  5. Put the lid on. Cook on LOW 3.5 to 4.5 hours, or HIGH 2 to 3 hours. Chicken is done at 165°F inside (use thermometer). Time changes by chicken size and your cooker.

  6. Taste sauce. Add salt or lemon squeeze if you want. Keep chicken whole or shred with forks in the pot and mix.

  7. Serve hot! Spoon sauce over chicken. Add more cheese or basil leaves if you got ’em. Eat with rice, potatoes, or green veggies. Yummy!
