Hamburger Gravy: Directions

Brown the beef: Heat a big skillet on medium. Cook the ground beef, breaking it into tiny bits with a spoon. Stir until no pink shows and it’s browned, about 8–10 minutes. Spoon off extra fat, leaving a little for taste.

Make the flour mix: Sprinkle flour over the hot beef. Stir until all meat is covered and no dry flour shows. It gets thick and pasty—that’s good!

Add milk and spices: Pour in milk slowly while stirring to scrape up browned bits. Mix in salt and lots of black pepper. Stir on medium heat until it warms and thickens a bit, 3–5 minutes. No need to fully thicken here.

Move to slow cooker: Pour the beef mix into a 3- to 4-quart slow cooker. Stir to spread it out evenly.

Cook slow: Cover and set to LOW for 4–5 hours, or HIGH for 2–2 1/2 hours. The gravy turns creamy and thick with mixed flavors. Stir once or twice if you can, to avoid sticking.

Fix thickness and taste: Too thick? Add a bit more milk. Too thin? Cook on HIGH without lid for 15–20 minutes, stirring now and then. Taste and add salt or more pepper.
