Ingredients

  • 1 bag (24-28 oz) frozen chicken pot pie bites (keep them frozen)

  • 2 cups jarred salsa (mild or medium, red or green)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 can of black beans (15 oz), wash them and take out the water

  • 1 cup shredded Mexican or cheddar cheese, split in half

  1. Spray your 4- to 6-quart slow cooker with cooking spray so it’s easy to clean.

  2. Dump the frozen chicken pot pie bites in the bottom. Spread them flat. No need to thaw!

  3. In a bowl, mix salsa and cream of chicken soup until smooth. No big lumps okay.

  4. Add black beans to the mix. Pour it all over the chicken bites. Don’t stir—just cover them.

  5. Put the lid on. Cook on LOW 4-5 hours or HIGH 2.5-3 hours. Bites should be hot, soft, and sauce bubbly.

  6. Use a spoon to break up the bites into small pieces. Mix into sauce. Add salt or pepper if you want.

  7. Sprinkle 3/4 cup cheese on top. Cover and cook on LOW 5-10 more minutes until cheese melts.

  8. Stir once. Add last 1/4 cup cheese on top if you like. Switch to WARM and serve from the pot.
