Sorrel Cream Chicken Slow Cooker
Serves: 4

Ingredients
-
8 chicken drumsticks with bone and skin (about 2½ to 3 pounds)
-
1 teaspoon salt, plus extra if needed
-
½ teaspoon black pepper
-
2 cups fresh sorrel leaves, chopped (no stems)
-
1 cup crème fraîche (or thick cream)
-
1 cup chicken broth (low-salt)
-
2 small onions, chopped fine
-
2 tablespoons white wine vinegar
-
2 garlic cloves, chopped fine (optional, but yummy)
-
1 tablespoon Dijon mustard (optional, for zing)
-
1 tablespoon olive oil or melted butter
-
¼ teaspoon red pepper flakes (optional, for a little spice)
Sorrel Cream Chicken: Directions
-
Dry the chicken legs with a paper towel. Sprinkle salt and pepper all over them. Put them in a single layer at the bottom of your slow cooker.
-
In a bowl, mix the chopped sorrel, crème fraîche, broth, onions, vinegar, garlic, mustard, oil or butter, and pepper flakes. Stir until smooth and blended. It might look thin—that’s okay!
-
Spoon all the mix over the chicken. Cover every piece and let some pool around the edges. Scrape the bowl clean.
-
Put the lid on. Cook it on low flame for 5-6 hours or high heat for 2½-3 hours. The chicken should be very soft and pull from the bone. Don’t peek too much!
-
Taste the sauce. Add more salt or pepper if you like. For thicker sauce, cook on high with lid off for 15-20 minutes, or boil a cup on the stove and stir back in.
Serving Tips
Spoon hot chicken and lots of sauce on plates. Add with mashed potatoes, noodles, or rice to sop up the yum. Try a fresh salad or green beans on the side. Warm bread dips great too!
