Slow Cooker Taco Casserole 4-Ingredient

Slow Cooker Taco Casserole 4-Ingredient. Some evenings, cooking feels like the last thing you want to do. You’re tired, you’re hungry, and standing at the stove for an hour sounds awful. That’s exactly when this recipe saves the day.

This slow cooker taco casserole only needs four ingredients, but it tastes like you really put in some effort. Nobody has to know it basically made itself.

The best part? It’s got that warm, filling feel of a real home-cooked meal, but with a fun taco flavor that makes it way more exciting than a boring weeknight dinner. Just load up the slow cooker, go live your life, and walk back into a home that smells incredible.

What You’ll Need

  • Ground beef → 1½ pounds, browned and drained
  • Taco seasoning → 1 packet (1 ounce)
  • Condensed tomato soup or enchilada sauce → 1 can (10 to 10.5 ounces)
  • Grated cheddar or Mexican mix cheese → 2 cups, divided into two parts

How to Make Slow Cooker Taco Casserole

  1. Step 1 — Brown the beef. Heat a skillet over medium heat and cook the ground beef, breaking it up as it goes. Once no pink remains, drain off the grease and set the meat aside.
  2. Step 2 — Mix in the seasoning. Dump the cooked beef into a large bowl, pour in the taco seasoning, and stir it all together. Make sure every bit of meat gets coated.
  3. Step 3 — Add your sauce. Pour in the tomato soup or enchilada sauce and stir until everything is well mixed.
  4. Step 4 — Prep the slow cooker. Spray the inside of your slow cooker with a little cooking spray or rub it lightly with oil. Spoon the beef mixture in and spread it into an even layer.
  5. Step 5 — Add the first round of cheese. Sprinkle 1½ cups of shredded cheese over the top of the meat. Set the remaining ½ cup aside for later.
  6. Step 6 — Let it cook. Put the lid on and cook on LOW for 3 to 4 hours, or HIGH for 1½ to 2 hours. You’ll know it’s ready when it’s hot and bubbling around the edges.
  7. Step 7 — Add more cheese at the end. About 10 to 15 minutes before serving, sprinkle that last ½ cup of cheese over the top. Put the lid back on and let it melt completely.
  8. Step 8 — Serve it up! Scoop it into bowls, or pile it over rice, pasta, or crushed tortilla chips. Add whatever toppings you like — sour cream, salsa, fresh avocado, or cilantro all work great.
