Slow Cooker Ranch Chicken Packets: Ingredients

4 skinless chicken breasts without bones (approximately 2 pounds of them)

1 packet dry ranch seasoning mix

1 ounce dry ranch seasoning mix (1 packet)

8 tablespoons unsalted butter, sliced into 8 pieces (1 stick)

1/4 cup low-sodium chicken broth
Instructions
Prepare Foil
Prepare 4 big pieces of heavy, aluminum foil approximately 12-14 inches long. Fold the edges around into half to assist in catching any juices.
Place Chicken
In each sheet of foil place one chicken breast. In case some of the pieces are too thick on one side, pound them gently with your hand to get them to the same thickness in order to cook them evenly.
Add Seasoning
Allow the dry ranch seasoning to fall equally all over the tops and sides of the 4 chicken breasts, and distribute the packet among them.
Add Butter
Place butter over each chicken breast in 2 slices. Attempt to separate the butter slices along the length of the chicken so that they melt and baste the entire portion.
Seal Packets
One foil sheet should be pulled in a long direction and then over the chicken and on the other side, then quickly join the sides, then fold downwards a few times in order to close it. Bring the shorter ends and fold them up to create a properly closed packet. Do the same with the rest of the pieces and you will have 4 foil packets wrapped nice and tight.
Add Broth
Pour the chicken broth into the bottom of a big slow cooker (a 6-quart one works). This assists in generating soft steam and also prevents the cooker to dry up as the packets are being cooked.
Arrange Packets
Lay the foil packets in single layer in the slow cooker, with seam sides up. It does not matter that they touch or lean another, only do not pile them on top of each other more than one layer.
Cook
Spray the inside of the slow cooker with cooking oil and then cover it with the lid and cook on LOW setting between 3.5 to 4.5 hours or until it is very tender and the inside reaches 165°F.. The longer end of the cooking time might be required by the thicker breasts of chicken.
Remove Packets
Switch off the slow cooker and carefully take off the packets using the tongs. Put them on the baking sheet or plates. Slowly open each packet but with your back, so that you do not come in contact with the steam of the packet.
Serve
You can just serve the chicken in the foil packets or plate-it. Pour the buttery ranch juices of both packets on the chicken and any of the sides you are serving.
