Slow Cooker Chicken with Yummy Spiced Sauce.. This chicken dinner is so easy and so good! You just mix a few things together, pour it over chicken, and let your slow cooker do all the work. What You Need
- 1½ pounds chicken breasts (no bones, no skin)
- 1 cup plain Greek yogurt (whole milk works best)
- 2 tablespoons harissa paste (this is a mild or spicy red chili sauce — you can find it at most grocery stores)
- 2 tablespoons lemon juice (squeeze about 1 lemon)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh cilantro, chopped up small (plus a little more for topping)
- 1 tablespoon olive oil (you can skip this if you want)
How to Make Slow Cooker Chicken
- Put your chicken breasts flat on the bottom of the slow cooker. It’s fine if they touch a little.
- Grab a bowl and add the yogurt, harissa paste, lemon juice, cumin, salt, pepper, cilantro, and olive oil.
- Stir everything together really well until the sauce looks smooth and pinkish with little green bits of cilantro in it.
- Pour the sauce all over the chicken. Use a spoon to spread it around so every piece of chicken gets covered.
- Put the lid on. Cook on LOW for 3½ to 4½ hours, or on HIGH for 2 to 2½ hours. The chicken is ready when it is no longer pink inside and its temperature reaches 165°F.
- Use two forks to pull the chicken apart into small pieces right inside the slow cooker. Then stir it into the sauce.
- Give it a taste! Add a little more salt or a squeeze of lemon if you think it needs it.
- Serve the chicken and sauce on top of rice, couscous, or any grain you like. Sprinkle some extra cilantro on top and enjoy!
