Slow Cooker Chicken and Carrots. Some of the best dinners in the world come from the shortest ingredient lists. This one has just five things — chicken, carrots, a can of soup, some broth, and a little salt and pepper. That’s it. You put everything in the slow cooker in the morning, cover it with the lid, and leave it alone. When you come back, dinner is hot, ready, and smells like something you’ve been cooking all day. No fancy tricks. No hard steps.
Slow Cooker Chicken and Carrots

Ingredients
- 2 pounds bone-in chicken pieces (legs, thighs, or mix)
- 4 pieces large carrots, peeled and sliced into 1/2-inch rounds
- 1 pieces condensed cream of chicken soup (10.5 oz can)
- 1 cups low-sodium chicken broth or water
- 1 teaspoons salt
- 0.5 teaspoons black pepper
Steps
- Set up the chicken: Put the slow cooker on your counter. Use a paper towel to pat the 2 pounds bone-in chicken pieces (legs, thighs, or mix) dry — this helps everything cook better. Lay the chicken pieces flat in the bottom of the slow cooker. If they have skin, turn that side up.
- Add the carrots: Drop the sliced 4 pieces large carrots, peeled and sliced into 1/2-inch rounds all around the chicken. Push them down into the open spaces so they snuggle in between the pieces. They’ll soak up all the yummy sauce as it cooks!
- Mix the sauce: In a small bowl, stir together the 1 pieces condensed cream of chicken soup (10.5 oz can), 1 cups low-sodium chicken broth or water, 1 teaspoons salt, and 0.5 teaspoons black pepper. Mix it until the soup loosens up and everything is blended. It doesn’t have to look perfect — just mix it up until it’s mostly smooth.
- Pour it over: Pour your sauce mix all over the chicken and carrots. Use the back of a spoon to push it around so it drips down between all the pieces and coats everything nicely.
- Cook it low and slow: Put the lid on and set the slow cooker to LOW for 6 to 360 minutes

Sprinkle a little more salt or pepper if it needs some. Scoop the chicken and carrots into bowls and pour some of the warm sauce from the bottom over them. Serve it hot and enjoy!
