1 (3-4 pound) beef chuck roast

1 (1-ounce) dry onion soup pack.

1 cup beef broth

2 tablespoons vegetable oil
Onion Pot Roast: Directions

Put your slow cooker on the counter and place the beef chuck roast inside the bottom and trim away any extra surface fat that is very thick but be careful not to trim away the flavor.

Pour the vegetable oil evenly over the top of the raw roast and also around the sides and turn it once or twice with clean hands or tongs so that there is a light covering of oil all over it.

With the pack of onion soup mix held over the slow cooker, sprinkle the mix evenly on all of the topside of the raw beef roast and allow any excess to fall down the sides and into the bottom of the crock.

Slowly pour the beef broth around the sides of the roast into the slow cooker taking care not to wash off the top of the meat the onion soup mix in order to build a tasty layer as it cooks.

Lid is removed, and cook on LOW in the slow cooker 8-10 hours, or on HIGH in the cooker 4-5 hours until the roast becomes very tender and falls apart with a fork.

When it is so, lift the roast out carefully on a serving platter, with two large forks or a slotted spatula so that it does not fall to pieces before you are prepared.

Scrape off all the cooking juices in the slow cooker, before proceeding with roast, then spoon a portion of the hot onion-rich broth over the sliced or shredded roast, and serve, passing additional juices at table.
Variations & Tips
Should you wish a heavier gravy, blend 2 tablespoons of cornstarch with 2 tablespoons of cold water and then stir the mixture into the hot cooking juices when you take out the roast; cover and cook on HIGH until it becomes slightly thickened some 10 minutes. To add to it, to create a more complete one-pot meal, peel 4-5 carrots into chunks and 1-11/2 pounds of halved baby potatoes, and tuck them around the roast, then sprinkle it with the onion soup mix (then you are adding over four ingredients). It is also possible to use a different beef cut which would be arm roast or rump roast, but chuck is usually the most tender and delicious to slow cook. You can use a low-sodium onion soup mix and low-sodium beef broth in case you do not want as much salt. You can easily brown the roast in a hot skillet with a little oil before putting it in the slow cooker, but when time is of the essence I do not bother to do this and leave the onion soup mix to do the job instead. Leftovers are also reheated with ease; tear off the meat and warm it in part of the juices and place it on toasted buns and can make simple hot sandwiches the next day.
