Ready the slow cooker and foil: Prep the slow cooker and foil: Place a 5- to 6-quart slow cooker on the counter. Prepare four pieces of aluminum foil of heavy duty, each approximately 12 to 14 inches in length. When foil of regular weight is used, put two sheets on top of one another each to prevent the packets tearing.

Season the potatoes: Add the potato chunks into a large mixing bowl. Scatter the dry onion soup mixture onto the potatoes. Stir with clean hands or large spoon until all the pieces are coated with the seasoning mix lightly. No extra oil is required and the potatoes and butter will provide the moisture necessary to cause steam in the packets.

Prepare the foil packets: Cut the practiced potatoes in4 equal portions and put them in the middle of each sheet of foil. Add 1 tablespoon of butter to each mound of potatoes, and put it directly on the top where the butter will melt down over the potatoes as they cook.

Packets: Tightly close foil packets: Take the long sides of each sheet of foil and pull them up over the potatoes and fold them towards the bottom in order to form a seam. Turn in the short ends and make sure that there are no gaps. This is done so as to trap some of the steam in there so that the savoury onion taste is infused in each bite.

Prepare in the slow cooker: Put the foil packets in the slow cooker with the seam-side up. There is nothing wrong with them overlapping a little, but do not squash them up too much so that air has a chance to circulate. Add the lid to the slow cooker.

Bake the potatoes: Bake on HIGH, 3 to 4 hours, or LOW, 6 to 7 hours, till the potatoes are very tender when pressed with a fork. The duration of cooking may not be exactly the same, since this is affected by your slow cooker and the size of the potato pieces.

Serve and finish: Take the hot foil packets in the slow cooker carefully out of the cooker with tongs or oven mitts. Break the packets very carefully and point them out of your way so as not to blow the steam out. Fork gently mix the potatoes with the melted butter and juices of onions in the foil0packet and serve them in the foil or in a serving dish. Heat any buttery onion drippings on top.
