Grandma’s Beef Stew. A warm and filling beef stew with soft meat, tasty veggies, and thick soup, great for family dinners on chilly days.
Ingredients

Beef stew meat, cut into pieces → 1 lb (450 g)

Olive oil → 2 tbsp

Onion, diced → 1 small

Garlic, minced → 3 cloves

Potatoes, peeled and cut in cubes → 3 med

Carrots, sliced → 2

Tomato paste → 1 tbsp

Beef broth → 4 cups
-
Water → 1 cup
-
Salt → 1 tsp
-
Black pepper → 1/2 tsp

Paprika → 1 tsp
-
Dried thyme → 1/2 tsp

Bay leaf → 1
-
Worcestershire sauce → 1 tbsp

Flour (optional, for thickening) → 1 tbsp

Fresh parsley, cut or chopped (optional) →
Grandma’s Beef Stew: Instructions

Heat the olive oil in a large pot on medium high heat and sear the beef until it is brown on all sides.

Stir in tomato paste and garlic and add diced onion and cook it to softening.

Add beef broth and water, scraping the bottom to loosen the pot.

Add carrots, thyme, bay leaf, pepper, paprika, salt and Worcestershire sauce and potatoes.

Boil then lower the heat, cover and simmer 60-90 minutes until beef becomes tender.

To increase the thickness of the stew, add flour to a little water, and stir it into the stew in the last 10 minutes.

Take out bay leaf, parsley garnish and serve warm.
