Bell Pepper stuffed with meat? Would you eat it? Juicy bell peppers filled with seasoned beef, rice, shrimp, and cheese, baked until tender and golden for a hearty, flavorful meal everyone will enjoy.
Ingredients
- Bell peppers, tops and seeds removed → 6 large red, yellow and green
- Ground beef → 400 g
- Cooked rice → 1/2 cup
- Red onion, finely diced → 1/2 small
- Garlic, minced → 2 cloves
- Diced tomatoes → 1/2 cup
- Grated mozzarella cheese → 1/2 cup
- Breadcrumbs → 1/4 cup
- Shrimp, peeled and deveined → 12-18
- Olive oil → 2 tbsp
- Paprika → 1 tsp
- Black pepper → 1/2 tsp
- Salt → 1 tsp
- Dried oregano → 1/2 tsp
- Chopped parsley → 2 tbsp
Bell Pepper stuffed meat: Instructions
- Preheat oven to 190degC (375degF). Position the de-cored bell peppers standing in a baking dish.
- Add olive oil to a medium-heat pan. Add onion and garlic, cook until the softening.
- Add ground beef and fry till brown. Add tomatoes, cooked rice, paprika, salt, pepper and oregano. Add and mix thoroughly and simmer several minutes.
- Take out of the heat and mix half of the cheese and a little parsley.
- Put the filling in each bell pepper pressing it in.
- Bake each pepper with shrimp, leftover cheese and breadcrumbs.
- Wrapped with foil and baked in 30 minutes. Take away foil and continue baking 10-15 min till the cheese is melted and golden.
- Garnish with parsley and serve warm.
