2 pounds frozen chicken breast cutlets (no bones or skin)

1 cup chunky mild salsa (from a jar you like)

1 cup orange juice

1 packet (1 ounce) taco seasoning (mild or regular)

Put the frozen chicken in a flat layer at the bottom of a 4- to 6-quart slow cooker. They can overlap a bit, but keep them mostly flat for even cooking.

In a bowl or big measuring cup, mix the salsa, orange juice, and taco seasoning until smooth and bright orange.

Pour the orange mix over the chicken. Coat every piece a little. Don’t add water—the chicken makes its own as it cooks.

Put the lid on. Cook on LOW for 5-6 hours, or HIGH for 2.5-3 hours, until it is done (165°F inside with a thermometer).

Shred the chicken with two forks right in the cooker into small bites. Stir so it grabs all the sauce.

Taste it. Add more seasoning if you want. For thicker sauce, leave the lid off on WARM or LOW for 10-15 minutes, stirring now and then.
