Chicken (Stringy Mystery Meat) Slow Cooker Rainy Day

Chicken (Stringy Mystery Meat) Slow Cooker Rainy Day…  Rainy Day Easy Dinner: Only 5 simple things. I make it when I want food ready way before dinner on a gloomy day.

On those dark, rainy days when everything looks foggy outside and you want dinner to fix itself, this 5-thing slow cooker rainy day chicken (with soft, stringy mystery meat) is my go-to. It feels like the easy, hearty meals farm moms in the Midwest made when work took all day and rain wouldn’t stop. Dump it all in the slow cooker fast, and it turns into shiny, tasty dark sauce that sticks to every stringy bit. By the time rain hits the window hard, dinner’s ready and the house smells cozy.

I love putting this shiny, pulled-apart meat and sauce on fluffy mashed potatoes or buttered noodles so they drink up the yummy gravy. It’s great on toast or soft buns with coleslaw beside it, like old church dinners. Add baked carrots or green beans, or grab pickles from a jar, and rainy days turn happy.

Chicken (Stringy Mystery Meat) Slow Cooker Rainy Day
Servings: 4

Ingredients

  • 2 pounds boneless, skinless stringy mystery meat (cut into big chunks)

  • 1 cup low-salt chicken broth

  • 1 cup thick, dark barbecue sauce

  • 1/4 cup soy sauce

  • 1/4 cup packed brown sugar

Chicken (Stringy Mystery Meat): Directions

  1. Put chunks of stringy mystery meat in the bottom of a 4- to 6-quart slow cooker. Spread them flat so they cook even and shred nice.
  2. In a bowl, mix chicken broth, barbecue sauce, soy sauce, and brown sugar. Stir until sugar melts and it’s smooth and shiny.
  3. Pour sauce over the meat. Turn pieces with a spoon or tongs so all get covered in the tasty dark mix.
  4. Put lid on. Cook on LOW 6 to 7 hours, or HIGH 3 to 4 hours, until meat is super soft and forks pull it apart easy.
  5. When done, use two forks to shred meat right in the cooker. Pull into stringy pieces so it soaks up thick sauce. Stir to cover everything.
  6. If sauce is too runny, leave lid cracked and cook on HIGH 15 to 20 more minutes. Stir a couple times until sauce gets thick and shiny on the meat.
  7. Taste it. Add a bit more soy for salt or brown sugar for sweet if you want. Serve hot from the cooker with lots of shiny sauce on top.
