Foil Pork and Zucchini Slow Cooker…. This foil-wrapped pork and zucchini in the slow cooker is like a secret recipe from church friends that spreads fast! A church helper told me about it long ago: you wrap everything in little foil packs, pop them in the slow cooker, and let it work. The pork gets super soft and juicy, the zucchini drinks up tasty sauce, and cleanup is almost nothing. Great for busy nights, hot summer days when you skip the oven, or any time you want yummy food with little work or shopping.

2 pounds pork shoulder without bone, cut into 1 1/2-inch pieces

4 small or medium zucchini, sliced into 1/2-inch half circles

1 cup thick teriyaki or soy stir-fry sauce from a bottle

2 tablespoons cooking oil like canola or vegetable

Get foil ready: Rip 4 big sheets of strong foil, each 12 to 14 inches long. Use two layers of thin foil if that’s all you have so it won’t rip. Bend up the edges a bit to hold sauce while you build.

Fix the pork: Dry pork pieces with paper towels so they taste better. Put pork in a bowl, pour on oil, and mix to cover all. Oil keeps meat wet and stops sticking.

Make the packs: Split zucchini even on the middle of each foil sheet in one layer. Put same amount of oiled pork on top of zucchini on every sheet. Stack neat so it closes easy.

Add sauce: Spoon teriyaki or soy sauce equal over pork and zucchini in each pack. Make sure all gets covered good. Use spoon back to push sauce between pieces. Coat well but not too wet.

Close tight: Fold long sides of foil up and together over food, then fold down tight a few times. Fold short ends snug so juice stays in. Make 4 solid packs that fit your slow cooker.

Put in cooker: Lay foil packs in slow cooker flat if you can, fold side up. If tight, stack gentle with space for hot air to move.

Cook soft: Cover and cook on LOW 6 to 7 hours, or HIGH 3 to 4 hours. Pork pulls easy with fork when done. Check early since cookers differ.

Rest and open safe: Turn off cooker. Let sit covered 5 minutes so steam calms. Use tongs or mitts to lift packs to plates. Open away from face—hot steam! Fold foil back.

Serve hot: Mix pork and zucchini in each pack to soak up brown sauce and break big meat bits. Spoon all with juice on plates or bowls. Eat right away with easy sides.
