Garlic Parmesan Baked Noodles. A 4-ingredient comfort food recipe from my mother-in-law, creamy, cheesy, and baked to golden perfection.
Ingredients
-
Egg noodles (wide or medium) → 12 oz
-
Salted melted butter → 1 cup (2 sticks)
-
Garlic, minced (or garlic powder) → 4 cloves (or 1 1/2 tsp)
-
Parmesan cheese, grated → 1/2 cup (for topping) + 1 cup (for mixing)
Garlic Parmesan Baked Noodles: Directions
-
Turn on your oven to 350°F (175°C). Grease a 9×13-inch metal baking pan lightly to allow the noodles to slide out after baking.
-
Boil a pot of salted water. Add the egg noodles and cook to about the package instructions, just al dente. You would like them soft yet not sticky because they will cook more in the oven.
-
As the noodles are cooking, in a bowl or microwave-safe saucepan, melt the butter. Add minced garlic (or garlic powder) and stir until it is evenly dispersed and smells nice. Set aside.
-
Drain the cooked noodles and place them into the warm pot. Add the garlicky melted butter to the noodles and toss lightly until all the strands are covered and shiny.
-
Put 1 cup of the grated parmesan cheese into the buttered pasta and stir again until the cheese is evenly distributed and beginning to stick to the pasta.
-
Pour the noodles into the prepared metal baking pan and spread them in a layer so that they cook evenly.
-
Sprinkle the remaining 1/2 cup of parmesan cheese evenly over the top of the noodles to create a layer of cheese that will be browned in the oven.
-
Put the pan on the middle rack, and bake 18-22 minutes, or until the cheese on top is melted, lightly golden, and the sides of the noodles are beginning to become crisp.
-
To achieve an additional golden coating, place the pan in the broiler 1-2 minutes, being careful not to burn the cheese. You want a bubbly top of deep, deep gold.
-
Take the pan out of the oven and allow the noodles to cool 5 minutes. This enables the butter to settle and the cheesy top to set slightly. Eat hot, scraping beneath the golden crust so that the noodles at the bottom slide in melted butter and parmesan.
