Ground beef → 500 g

Olive oil → 1 tablespoon

Onion, diced → 1 small

Garlic, minced → 2 cloves

Potatoes, chopped and peeled → 2 medium

Carrots, sliced → 2

Green beans (fresh or frozen) → 1 cup

Corn kernels → 1 cup

Peas → 1/2 cup

Diced tomatoes → 1 can (400 g)

Beef broth → 4 cups

Tomato paste → 1 tablespoon

Paprika → 1 teaspoon

Dried thyme → 1/2 teaspoon

Beef and Veggie Soup: Instructions

Add the ground beef to a large pot under medium heat and cook until it is brown, breaking it up in the process.

Then add diced onion and garlic, and cook until soft and fragrant.

Add tomato paste, paprika and thyme and stir in the beef.

Add carrots, peas, green beans, and corn, diced potatoes, and tomatoes.

Add the beef broth and boil.

Turn down heat and allow to simmer 25-30 minutes until vegetables are tender.
