1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

3 cups beef broth

1 can (14.5 oz) diced tomatoes

2 medium potatoes peeled and cut into dices.

1 cup carrots, sliced

1 cup of green beans that have been sliced into pieces.

1 cup corn kernels

1 cup peas
-
275 ml or 1/2 cup of small pasta (e.g. elbow macaroni)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika
-
1/2 teaspoon dried oregano
Hearty Vegetable Beef Soup: Instructions

Heat in a large pot using medium heat olive oil. Add the beef and cook until it is brown, stirring it up as it cooks. Drain excess fat if needed.

Add onions and garlic that is diced and cooks 2-3 minutes until tender and aromatic.

Add the beef broth and the diced tomatoes and mix thoroughly.

Next, add the potatoes, carrots, green beans, corn, and peas. Then add some salt, pepper, paprika, and oregano. Heat up the soup to a small boil.

Turn off the heat and cook approximately 20 minutes until the vegetables start softening.

Add the pasta and cook it further 8-10 minutes until the vegetables and pasta turn tender.

Add taste and add seasoning where necessary and serve warm.
