Crockpot Cheesesteak Potato Casserole

Ingredients

1 ½ lbs beef steak or stew beef, cut into bite-sized pieces

1 ½ lbs baby potatoes, halved or quartered

1 green bell pepper, sliced

1 red bell pepper, sliced

1 small onion, sliced

3 tablespoons butter, cubed

1 packet onion soup mix

2 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 cup beef broth

1 ½ cups shredded mozzarella cheese

½ cup shredded cheddar cheese

2 tablespoons chopped green onions

Cheesesteak Potato Casserole

Instructions

Lightly grease the inside of the crockpot. Add the halved baby potatoes to the bottom.

Layer the beef pieces over the potatoes.

Add sliced bell peppers and onion on top of the beef.

Sprinkle the onion soup mix, minced garlic, salt, pepper, and paprika evenly over everything.

Pour the beef broth around the edges. Dot the top with cubed butter.

Cover and cook:
LOW for 6–7 hours until the potatoes are tender and the beef is fully cooked.

Stir gently to combine the flavors. Sprinkle mozzarella and cheddar cheese over the top.

Cover again and cook for 15–20 minutes, until the cheese is melted and bubbly.

Garnish with chopped green onions before serving.
